So I got one of the Phred Instruments 'Doc knockoffs. It's got the series/split coil wiring like Trey's guitar. What I'm wondering is, will I be able to wire it all same like if I use these pickups? Considering grabbing a pair and upgrading.

Yes you can...I have those pups in my PRS, and I have it wired that way...so does Fulltone. The pups you have now, probably have different colored leads so you just have the get the color code chart from Seymour Duncan website. There is a wiring diagram in the coil tap series/parallel topic that I posted not too long ago.
If the pups have 4 lead wires, you should be able to do the same wiring as trey.
