Need help choosing tone woods...

So Ive been talking with a builder that builds very Languedoc influenced guitars... and im having trouble deciding what tone woods to use for the back and sides. Its going to be a curly maple top, maple neck, ebony fretboard, and koa binding all around. I have narrowed down my possible choices to: Wenge, cocobolo,or Indian rosewood.
I was thinking macassar ebony for awhile... but i think that may add too much "thump" to the overall tone...
any thoughts or input would be helpful.
